How do I create a separate driver profile for each of my children, so we can track performance improvements of each separate driver? Thanks!

You're going to have to create an Origin account for them and buy a second copy of the game...it's now going for 19.99 and includes the DLC, there is no other way than that.

It's one of the many shortcomings that keep shift 2 from being the ultimate racing game that leaves all competition behind. It'd not the high end difficult stuff that trips this game up. It are the simple bugs and oversights that are extremely annoying. The horrible menu's. The lack of simple options. The tuning/saving. The paint editor. Simple things that other games got right ten years ago haunt shift 2.
